Day 1: Acai Bowl

So I have made it through Day 1 of the 100 Days Project (also known as the day I ate a frozen dessert for breakfast on a winter’s morning). I plumped for something easy, so that I wouldn’t lose momentum/enthusiasm for the project. A few blender dramas later, and my gusto turned to wariness.

I have never made one of these before and I don’t even know how to pronounce it, but I’ll roundly pronounce it a success, even if it did leave my teeth chattering. I shall consume all my smoothies in bowl form from now on.

 

100 Days Project Day 1: Acai Bowl

 

Acai Bowl Recipe

Serves 2, generously

Topping

2 Tbsp pumpkin seeds, toasted
2 Tbsp almond slices, toasted
Grapes, halved
2 Tbsp salty sweet coconut strips
Chia seeds

Smoothie

2 frozen bananas
8 mint leaves
1 tsp vanilla extract
2 tsp acai berry powder
2 Tbsp coconut yoghurt
1 cup almond milk

Blend all the smoothie ingredients together until no large chunks remain, serve with whatever seasonal, delicious toppings you prefer.
